To those of us who believe that all of life is sacred every crumb of bread and sip of wine is a Eucharist, a remembrance, a call to awareness of holiness right where we are.I want all of the holiness of the Eucharist to spill out beyond church walls, out of the hands of priests and into the regular streets and sidewalks, into the hands of regular, grubby people like you and me, onto our tables, in our kitchens and dining rooms and backyards.

When you uncork a bottle of mature fine wine, what you are drinking is the product of a particular culture and tradition, a particular soil, a particular climate, the weather in that year, and the love and labour of people who may since have died. The wine is still changing, still evolving, so much so that no two bottles can ever be quite the same. By now, the stuff has become incred- ibly complex, almost ethereal. Without seeking to blaspheme, it has become something like the smell and taste of God.

He could pass off the inferior bottles on tables seven and four. Table seven knew nothing of wine, sending back a bottle of Riesling as "corked" because it had bits of cork in it, the imbeciles. Table four had gulped down a very special old pale brandy as though it was common wood alcohol, which was probably what they had been drinking because they had said that his brandy lacked bite. They deserved inferior burgundy. The bottles that had been stored too close to the stove might have enough bite by now for table four. A wine waiter's revenge may be long in coming, but it arrives in the end.

The whiskey was a good start. I got the idea from Dylan Thomas. He's this poet who drank twenty-one straight whiskeys at the White Horse Tavern in New York and then died on the spot from alcohol poisoning. I've always wanted to hear the bartender's side of the story. What was it like watching this guy drink himself out of here? How did it feel handing him number twenty-one and watching his face crumple up before the fall of the stool? And did he already have number twenty-two poured, waiting for this big fat tip, and then have to drink it himself after whoever came took the body away?

Just like literature, wine takes time to learn. Before having access to the emotion of a stunning poem or to the vigor of a captivating novel, we all had to go through a long initiation. First, we need to learn the alphabet, the sound of each letter. In wine, that would be learning about the grapes and their characteristics. Then, once we master our letters, we need to learn the arrangements of letters, the pronunciation, the grammar, the structure of sentences. Now we can read. In wine, that would be the stage when we start noticing differences between two reds. You no longer drink wine: you start drinking this wine.

The social prestige of wine at table and at the club must be destroyed through lofty example and polite ridicule; forces which are not always available, and for whose successful operation much time will be required. But the outstanding fact remains, that the world has come to regard liquor in a new and clearer light. Our next generation of poets will contain but few Anacreons, for the thinking element of mankind has robbed the flowing bowl of its fancied virtues and fictitious beauties. The grape, so long permitted to masquerade as the inspirer of wit and art, is now revealed as the mother of ruin and death. The wolf at last stands divested of its sheep’s clothing.

Jeg peker på mit navn at der står det og at jeg er den og den. De forstår intet, men de klapper mig og finder at jeg er i orden. Så er det en som går bort til disken og forlanger musik. Og straks begynder et orkestrion å gå. Dette er til ære for dig! tænker jeg, og jeg reiser mig og hilser i alle retninger. Som ved et trylleri begynder jeg å bli meget glad, jeg forlanger vin og vi blir rigtig mange til å drikke. Hehe, det rygtes i salen at jeg er kommet til Moskva, en mand blir hentet som kan fransk; men jeg syntes det gik bra på russisk også og jeg kan desuten ikke stort fransk, så manden er mig uvelkommen. Men vi skjæner ham også og later ham sætte sig ved siden av os.

Even if you get drunk on the wine and through this greed you lapse into lechery, the wine is not to blame but you are, in being unable or unwilling to discipline yourself. And even if you look at a woman and become caught up in her beauty and assent to sin [= adultery; extramarital sex], the woman is not to blame nor is the beauty given her by God to be disparaged: rather, you are to blame for not keeping your heart more clear of wicked thoughts. ... If you feel yourself tempted by the sight of a woman, control your gaze better ... You are free to leave her. Nothing constrains you to commit lechery but your own lecherous heart.
