The minute you land in New Orleans, something wet and dark leaps on you and starts humping you like a swamp dog in heat, and the only way to get that aspect of New Orleans off you is to eat it off. That means beignets and crayfish bisque and jambalaya, it means shrimp remoulade, pecan pie, and red beans with rice, it means elegant pompano au papillote, funky file z'herbes, and raw oysters by the dozen, it means grillades for breakfast, a po' boy with chowchow at bedtime, and tubs of gumbo in between. It is not unusual for a visitor to the city to gain fifteen pounds in a week--yet the alternative is a whole lot worse. If you don't eat day and night, if you don't constantly funnel the indigenous flavors into your bloodstream, then the mystery beast will go right on humping you, and you will feel its sordid presence rubbing against you long after you have left town. In fact, like any sex offender, it can leave permanent psychological scars.

Sitting on the porch alone, listening to them fixing supper, he felt again the indignation he had felt before, the sense of loss and the aloneness, the utter defenselessness that was each man's lot, sealed up in his bee cell from all the others in the world. But the smelling of boiling vegetables and pork reached him from the inside, the aloneness left him for a while. The warm moist smell promised other people lived and were preparing supper.He listened to the pouring and the thunder rumblings that sounded hollow like they were in a rainbarrel, shared the excitement and the coziness of the buzzing insects that had sought refuge on the porch, and now and then he slapped detachedly at the mosquitoes, making a sharp crack in the pouring buzzing silence. The porch sheltered him from all but the splashes of the drops that hit the floor and their spray touched him with a pleasant chill. And he was secure, because someewhere out beyond the wall of water humanity still existed, and was preparing supper.

Imagine if we had a food system that actually produced wholesome food. Imagine if it produced that food in a way that restored the land. Imagine if we could eat every meal knowing these few simple things: What it is we’re eating. Where it came from. How it found its way to our table. And what it really cost. If that was the reality, then every meal would have the potential to be a perfect meal. We would not need to go hunting for our connection to our food and the web of life that produces it. We would no longer need any reminding that we eat by the grace of nature, not industry, and that what we’re eating is never anything more or less than the body of the world. I don’t want to have to forage every meal. Most people don’t want to learn to garden or hunt. But we can change the way we make and get our food so that it becomes food again—something that feeds our bodies and our souls. Imagine it: Every meal would connect us to the joy of living and the wonder of nature. Every meal would be like saying grace.

In Paris in the 1950s, I had the supreme good fortune to study with a remarkably able group of chefs. From them I learned why good French good is an art, and why it makes such sublime eating: nothing is too much trouble if it turns out the way it should. Good results require that one take time and care. If one doesn't use the freshest ingredients or read the whole recipe before starting, and if one rushes through the cooking, the result will be an inferior taste and texture--a gummy beef Wellington, say. But a careful approach will result in a magnificent burst of flavor, a thoroughly satisfying meal, perhaps even a life-changing experience.Such was the case with the sole meunière I ate at La Couronne on my first day in France, in November 1948. It was an epiphany.In all the years since the succulent meal, I have yet to lose the feelings of wonder and excitement that it inspired in me. I can still almost taste it. And thinking back on it now reminds me that the pleasures of table, and of life, are infinite--toujours bon appétit!

According to the surgeon general, obesity today is officially an epidemic; it is arguably the most pressing public health problem we face, costing the health care system an estimated $90 billion a year. Three of every five Americans are overweight; one of every five is obese. The disease formerly known as adult-onset diabetes has had to be renamed Type II diabetes since it now occurs so frequently in children. A recent study in the Journal of the American Medical Association predicts that a child born in 2000 has a one-in-three chance of developing diabetes. (An African American child's chances are two in five.) Because of diabetes and all the other health problems that accompany obesity, today's children may turn out to be the first generation of Americans whose life expectancy will actually be shorter than that of their parents. The problem is not limited to America: The United Nations reported that in 2000 the number of people suffering from overnutrition--a billion--had officially surpassed the number suffering from malnutrition--800 million.

By 2030, says the UN Food and Agriculture Organization, fish farming will dominate fish supplies. Given how wrong the FAO has been in the past--saying catches were going up when, in fact, they were going down--this statement is worth examining carefully. When you do, you find it to be an observation of previous trends, not a reflection of what could happen or what people might want--in the same way as Red Delicious was once far and away the most popular apple in the United States because it was basically the only apple you could get. The FAO is simply observing that fish farming is the fastest growing form of food production in the world--growing at 9 percent a year and by 12-13 percent in the United States. Nobody is asking us whether we want this. It is just happening. The continued destruction of mangrove swamps in poor countries to provide shrimp for people living in rich countries is simply the market operating in a vacuum untroubled by ethics. It is a reflection of what will go on happening if we do not find ways of exercising any choice in the matter.

Let us not believe that an external fast from visible food alone can possibly be sufficient for perfection of heart and purity of body unless with it there has also been united a fast of the soul. For the soul also has its foods that are harmful. Slander is its food and indeed one that is very dear to it. A burst of anger also supplies it with miserable food for an hour and destroys it as well with its deadly savor. Envy is food of the mind, corrupting it with its poisonous juices and never ceasing to make it wretched and miserable at the prosperity and success of another. Vanity is its food which gratifies the mind with a delicious meal for a time but afterward strips it clear and bare of all virtue. Then vanity dismisses it barren and void of all spiritual fruit. All lust and shift wanderings of heart are a sort of food for the soul, nourishing it on harmful meats but leaving it afterwards without a share of its heavenly bread and really solid food. If then, with all the powers we have, we abstain from these in a most holy fast our observance of the bodily fast will be both useful and profitable.

Mark came home late one frozen Sunday carrying a bag of small, silver fish. They were smelts, locally known as icefish. He’d brought them at the store in the next town south, across from which a little village had sprung up on the ice of the lake, a collection of shacks with holes drilled in and around them. I’d seen the men going from the shore to the shacks on snowmobiles, six-packs of beer strapped on behind them like a half dozen miniature passengers. “Sit and rest,” Mark said. “I’m cooking.” He sautéed minced onion in our homemade butter, added a little handful of crushed, dried sage, and when the onion was translucent, he sprinkled n flour to make a roux, which he loosened with beer, in honor of the fishermen. He added cubed carrot, celery root, potato, and some stock, and then the fish, cut into pieces, and when they were all cooked through he poured in a whole morning milking’s worth of Delia’s yellow cream. Icefish chowder, rich and warm, eaten while sitting in Mark’s lap, my feet so close to the woodstove that steam came off my damp socks.

. . . every society that grows extensive lawns could produce all its food on the same area, using the same resources, and . . . world famine could be totally relieved if we devoted the same resources of lawn culture to food culture in poor areas. These facts are before us. Thus, we can look at lawns, like double garages and large guard dogs, [and Humvees and SUVs] as a badge of willful waste, conspicuous consumption, and lack of care for the earth or its people.Most lawns are purely cosmetic in function. Thus, affluent societies have, all unnoticed, developed an agriculture which produces a polluted waste product, in the presence of famine and erosion elsewhere, and the threat of water shortages at home.The lawn has become the curse of modern town landscapes as sugar cane is the curse of the lowland coastal tropics, and cattle the curse of the semi-arid and arid rangelands.It is past time to tax lawns (or any wasteful consumption), and to devote that tax to third world relief. I would suggest a tax of $5 per square metre for both public and private lawns, updated annually, until all but useful lawns are eliminated.

It's just the way things are. Take a moment to consider this statement. Really think about it. We send one species to the butcher and give our love and kindness to another apparently for no reason other than because it's the way things are. When our attitudes and behaviors towards animals are so inconsistent, and this inconsistency is so unexamined, we can safely say we have been fed absurdities. It is absurd that we eat pigs and love dogs and don't even know why. Many of us spend long minutes in the aisle of the drugstore mulling over what toothpaste to buy. Yet most of don't spend any time at all thinking about what species of animal we eat and why. Our choices as consumers drive an industry that kills ten billion animals per year in the United States alone. If we choose to support this industry and the best reason we can come up with is because it's the way things are, clearly something is amiss. What could cause an entire society of people to check their thinking caps at the door--and to not even realize they're doing so? Though this question is quite complex, the answer is quite simple: carnism.

Confronted with the problems that characterize our herding culture, we are perhaps like the metaphorical man wounded by an arrow that the Buddha discussed with his students. He said that the man would be foolish if he tried to discover who shot the arrow, why he shot it, where he was when he shot it, and so forth, before having the arrow removed and the wound treated, lest he bleed to death attempting to get his questions answered. We, likewise, can all remove the arrow and treat the wound of eating animal foods right now. We don't need to know the whole history. We can easily see it is cruel and that it is unnecessary; whatever people have done in the past, we are not obligated to imitate them if it is based on delusion. Perhaps in the past people thought they needed to enslave animals and people to survive, and that the cruelty involved in it was somehow allowed them. It's obviously not necessary for us today, as we can plainly see by walking into any grocery store, and the sooner we can awaken from the thrall of the obsolete mythos that we are predatory by nature, the sooner we'll be able to evolve spiritually and discover and fulfill our purpose on this earth.
