…food is capable of feeding far more than a rumbling stomach. Food is life; our well-being demands it. Food is art and magic; it evokes emotion and colors memory, and in skilled hands, meals become greater than the sum of their ingredients. Food is self-evident; plucked right from the ground or vine or sea, its power to delight is immediate. Food is discovery; finding an untried spice or cuisine is for me like uncovering a new element. Food is evolution; how we interpret it remains ever fluid. Food is humanitarian: sharing it bridges cultures, making friends of strangers pleasantly surprised to learn how much common ground they ultimately share.

Me and the folks who buy my food are like the Indians -- we just want to opt out. That's all the Indians ever wanted -- to keep their tepees, to give their kids herbs instead of patent medicines and leeches. They didn't care if there was a Washington, D.C., or a Custer or a USDA; just leave us alone. But the Western mind can't bear an opt-out option. We're going to have to refight the Battle of the Little Big Horn to preserve the right to opt out, or your grandchildren and mine will have no choice but to eat amalgamated, irradiated, genetically prostituted, barcoded, adulterated fecal spam from the centralized processing conglomerate.

The Princess attitude to food isn’t about obsessively scraping the oil off your salad, saying no to crème brûlée and taking a little snack bag of spinach everywhere you go. I truly believe it’s more important to consciously choose what you’re going to eat and enjoy every bite – even if it’s a gooey chocolate cake with extra sugary sprinkles – than to make a healthy diet such a burden that your life stretches out in front of you as a joyless, never-ending round of wafer snack breads. (Let’s face it, chocolate is a divine gift to us all and should be appreciated for the mood-altering drug that it is.)

...it was one of the best meals we ever ate.Perhaps that is because it was the first conscious one, for me at least; but the fact that we remember it with such queer clarity must mean that it had other reasons for being important. I suppose that happens at least once to every human. I hope so.Now the hills are cut through with superhighways, and I can't say whether we sat that night in Mint Canyon or Bouquet, and the three of us are in some ways even more than twenty-five years older than we were then. And still the warm round peach pie and the cool yellow cream we ate together that August night live in our hearts' palates, succulent, secret, delicious.

t smells in. Let the smell of hot tarmac in the summer remind you of a meal you ate the first time you landed in a hot place, when the ground smelled like it was melting. Let the smell of salt remind you of a paper basket of fried clams you ate once, squeezing them with lemon as you walked on a boardwalk. Let it reach your deeper interest. When you smell the sea, and remember the basket of hot fried clams, and the sound of skee-balls knocking against each other, let it help you love what food can do, which is to tie this moment to that one. Then something about the wind off the sea will have settled in your mind, and carried the fried clams and squeeze of a lemon with it.

I don't believe vegans (or vegetarians) who still get their (packaged, preservative/chemical-ridden) food from industrial food systems have any righteous ground to stand on, nor do I think a deep look at the sentient life of plants or the true environmental impact of agriculture permits them any comfortable distance from cruelty. Everything in this world eats something else to survive, and that something else, whether running on blood or chlorophyll, would always rather continue to live rather than become sustenance for another. No animal wants to be penned up and milked, or caged and harvested, and you've never seen plants growing in regimented lines of their own accord.

every session I had no fewer than sixteen girls with “allergies” to dairy and wheat—cheese and bread basically—but also to garlic, eggplant, corn, and nuts. They had cleverly developed “allergies,” I believe, to the foods they had seen their own mothers fearing and loathing as diet fads passed through their homes. I could’ve strangled their mothers for saddling these girls with the idea that food is an enemy—some of them only eight years old and already weird about wanting a piece of bread—and I would’ve liked to bludgeon them, too, for forcing me to participate in their young daughters’ fucked-up relationship with food.

In our day, there are stresses and fractures of the human-animal bond, and some forces at work would sever it once and for all. They pull us in the wrong direction and away from the decent and honorable code that makes us care for creatures who are entirely at our mercy. Especially within the last two hundred years, we've come to apply an industrial mind-set to the use of animals, too often viewing them as if they were nothing but articles of commerce and the raw material of science, agriculture, and wildlife management. Here, as in other pursuits, human ingenuity has a way of outrunning human conscience, and some things we do only because we can--forgetting to ask whether we should.

Eating is an agricultural act,' as Wendell Berry famously said. It is also an ecological act, and a political act, too. Though much has been done to obscure this simple fact, how and what we eat determines to a great extent the use we make of the world - and what is to become of it. To eat with a fuller consciousness of all that is at stake might sound like a burden, but in practice few things in life can afford quite as much satisfaction. By comparison, the pleasures of eating industrially, which is to say eating in ignorance, are fleeting. Many people today seem erfectly content eating at the end of an industrial food chain, without a thought in the world; this book is probably not for them.
